I would suggest just taking cles in all those areas. Then, if you find that you're taking lots of courses in, say, economics, go ahead and declare that major as well (uming this is with enough time to finish the requirements). Your major should give you enough depth, so let your other cles show your breadth (breadth=well rounded). Double majoring just to have a double major is more likely to turn into just a list of requirements and keep you from taking cles you might enjoy
